KEN’S BLACK BEAN AND CORN SALAD

FOR 4:

1 16 oz can of black beans, rinsed and drained

1 cup fresh corn, off cob

¼ red onion, chopped

1 tomato, chopped

2-4 tbsp salsa (or balsamic vinegar)

Splash of Habanero sauce

Juice of one lime

Chopped cilantro

Chopped parsley

Black pepper & salt to taste

2 stalks celery

4 scallions, chopped

1 bunch radishes, chapped

Edamame

Pomegranate

Celery salt

Poppy seed
